Garlic Roasted Chicken

Ingredients:

Directions:

  1. Preheat oven to 350 degrees F
  2. Place chicken in a roasting pan, breast side up
  3. Season the chicken with salt and pepper, stuff with lemon halves, rosemary, 4 cloves of garlic in chicken cavity.
  4. Put the rest of the garlic in small bowl with the olive oil and put in microwave for 30 to 40 seconds then lift skin and rub the rest of the garlic oil between chicken and skin.
  5. Bake uncovered 2- 2 1/2 hours (internal temperature of 180 degrees F). Remove from heat, and baste drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving.
