Ingredients:

Directions:

  1. Before starting you will need 1 medium size jar with a tight fitting lid.
  2. Break up the head of garlic into individual cloves, remove any loose paper from bulb but leaving the paper that is around the garlic clove on.
  3. Place the garlic into a pan and cover with the oil.
  4. Turn the heat onto very low and simmer for 10 minutes.
  5. Remove the garlic from the oil, allow the garlic to cool, and then squeeze off the skin. Replace the skinned garlic into the oil and heat for a further 20 minutes (make sure the flame is set low as you do not want to fry the garlic or overheat the oil as the flavour changes and the garlic will be bitter.
  6. Allow the oil to cool then pour into a clean jar, this oil will keep in the fridge for a couple of weeks.
