Garlic Chicken Quinoa with Peppers

Ingredients:

Directions:

  1. Prepare quinoa with chicken stock according to package directions.
  2. Cut chicken into one inche pieces. Heat large nonstick skillet over high heat and add the oil (suggest using garlic infused oil). Add chicken and saute for 5 minutes or until golden brown.
  3. Add peppers, saute for 1-2 minutes. (can add a medium sliced onion and diced tomatoes for extra flavor)
  4. Add garlic and saute until peppers become slightly limp - about 1-2 minutes.
  5. Mix in parmesan cheese and season with salt and pepper.
  6. Toss in quinoa and basil. Garnish with additional parmesan cheese.
