Directions:

  1. In 2qt saucepan melt butter. stir in remaining ingredients except tomato and parsley. cover and cook over medium heat stirring occasionally until vegetables are crispy tender.
  2. Remove from heat.
  3. Stir in tomato and parsley, cover and let stand 1 minute or until tomato is heated through.
  4. Serve.
