Ingredients:

Directions:

  1. Melt butter in a large saucepan over medium-high heat.
  2. Add onion, and sauté 5 minutes.
  3. Stir in currants, apricots, salt, broth, and cinnamon sticks; bring to a boil.
  4. Add couscous, and return to a boil.
  5. Cover, reduce heat, and simmer 15 minutes.
  6. Let couscous mixture stand 5 minutes.
  7. Discard cinnamon sticks.
  8. Stir in cilantro.
