Ingredients:

  • 2 1/2 cups flour
  • 1 3/4 cups sugar
  • 1 tsp salt
  • 1 cup milk
  • 2 tsp rum
  • 4 eggs
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease and flour a 10-inch (12-cup) bundt or tube pan.
  3. Remove 2 tablespoons flour and mix with fruits and nuts.
  4. Sieve remaining flour, sugar, baking powder and salt in large mixer bowl.
  5. Add butter, milk and flavoring.
  6. Blend on low to mix, then 2 minutes on medium speed.
  7. Add eggs and beat 2 minutes more. Stir in floured fruit and nut mixture.
  8. Turn batter into prepared cake pan.
  9. Bake for 55-60 minutes or until cake tests done.
  10. Cool 10 minutes in pan.
  11. Sprinkle with confectioners' sugar.
  12. For Cupcakes:.
  13. Prepare batter as above.
  14. Spoon into 24 large muffin cups, filling 3/4 full.
  15. Bake for 20-25 minutes.
