Ingredients:

  • beat together
  • 1 1/2 cup. sugar
  • 2 eggs
  • use high speed on mixer.
  • beat until light and fluffy. then add
  • 2 1/4 cup. flour
  • 1 tsp. vanilla
  • 1 can (1 lb. 1 0z.) fruit cocktail, undrained
  • 1 1/2 tsp. soda
  • 1/2 tsp. salt

Directions:

  1. Beat at medium speed until well blended, scraping sides and bottom of bowl.
  2. Spread in greased and flour pan (15 x 10 x 1 jelly roll pan).
  3. Sprinkle 1 1/3 cup flaked coconut and 1/2 cup chopped walnuts over batter.
  4. Bake 20 minutes in 350 degree oven until golden brown.
  5. While hot drizzle with glaze.

  7. GLAZE
  8. Combine in sauce pan:
  9. 1/4 c. evaporated milk
  10. 1/2 tsp. vanilla
  11. 3/4 c. sugar
  12. 1/2 c. butter
  13. Bring to a boil.
  14. Boil 2 minutes, stirring constantly,
  15. Remove from heat.
  16. Stir in 1/2 cup chopped walnuts.
  17. Cool and cut in bars.
