Frozen Mint Chocolate Mousse

Ingredients:

  • 2/3 cup (150 ml) chocolate syrup
  • 1 tsp (5 ml) peppermint extract
  • 1 cup (250 ml) whipping cream , whipped

Directions:

  1. In large bowl, combine Eagle Brand, syrup and peppermint extract. Fold in whipped cream.
  2. Spoon equal portions into 6 or 8 individual serving dishes.
  3. Freeze 3 to 4 hours or until firm.
  4. Garnish as desired.
  5. Serve immediately.
  6. *Optional garnishes:
  7. Chocolate shavings, whipped cream, a mint leaf, a mint truffle, a chopped York Mint patty, a chocolate or vanilla wafer, an Oreo cookie, a few mini marshmallows.
  8. (I added a cup of mini marshmallows to this recipe and it came out great! You get more mousse and a lighter texture.)
