Ingredients:

  • 12 large eggs
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 lb potatoes cut into a dice no larger than 1/2-inch
  • 1 large onion, diced
  • fresh chopped herbs ; try thyme , maybe oregano, fresh cilantro on top perhaps, always flat-leaf parsley. match the herbs to the ingredients you have on hand.
  • salt to taste
  • 1 cup grated cheese (gruyere is a personal favorite)
  • any other ingredients you have on hand; try crumbled bacon, or leftover veggies. anything really.

Directions:

  1. Preheat the oven to 350 degrees.
  2. Heat the olive oil and butter in a 10-inch frying pan with an oven-proof handle over medium heat.
  3. Add potatoes and onion and sautee until the onions are soft and potatoes are crispy, about 20 minutes.
  4. Add any other ingredients you like, making sure they are cooked through.
  5. Wisk together the eggs, herbs, salt, and pepper until well blended.
  6. Stir in the cheese.
  7. Pour the egg mixture over the onion and potato in the frying pan.
  8. Cook over medium heat 4-5 minutes until the bottom is lightly set.
  9. Place the frying pan in the oven and bake until the frittata is puffy and golden brown, 10-15 minutes.
