Ingredients:

Directions:

  1. In a large skillet heat olive oil.
  2. Add peppers, garlic, onions,; sauté for 4-5 minutes.
  3. Add artichokes, roasted red pepper, basil and olives & cook another 1 to 2 minutes.
  4. Combine eggs, milk, salt & pepper.
  5. Pour over vegetable mixture.
  6. Cook the mixture (without stirring) until the mixture begins to set at bottom and sides;
  7. Lift cooked eggs so that uncooked portion flows to bottom of pan.
  8. Cover with thinly sliced ham or salami.
  9. Top with cheese and let it melt.
  10. Heat tortilla 2 minutes in Microwave.
  11. Cut your frittata and divide mixture evenly each tortilla.
  12. Fold in half like a quessadilla or roll up like a wrap.
  13. Serve while still warm.
  14. The vegetables are your choice.
  15. If you want Low Fat substitute the eggs with1 1/2 cup Egg Creations( egg beaters).
