Ingredients:

  1. Quarter a medium zucchini lengthwise, leaving the last inch or so so that the quarters remain together. Section across the quarters at 1/4 inch.
  2. Shuck one ear of corn. With a sharp kitchen knife, cut the kernels from the cob. Discard the cob.
  3. Finely chop the shallot.
  4. Heat the Crisco in a saute pan. When hot, add the zucchini, corn, and shallot. Sprinkle with nutmeg to your desired taste. Salt and pepper. Continue frying until the corn develops a brown coating. Remove and enjoy.
