Fried Oyster Club Sandwiches

Ingredients:

  • 12 slices bacon
  • 1 pint oyster
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 12 slices tomatoes
  • 18 slices toast

Directions:

  1. Fry bacon til done, drain on paper towel, set aside.
  2. Mix flour, salt and pepper.
  3. Drain oysters, pat dry with paper towel.
  4. Toss in seasoned flour.
  5. Fry in bacon fat til browned on both sides turning only once.
  6. Takes about 5 minutes.
  7. Make 6 sandwiches arranging all between 3 slices of toast each.
  8. Cut corner to corner, hold each half together with a toothpick.
  9. Swiss, provolone, meunster, co-jack or pepper jack cheese is good on these, too!
