Fresh Strawberry and Almond Baked Brie

Ingredients:

  1. Gently remove the rind on the brie. If you like the flavor it is ok to leave it on, but I personally do not enjoy its texture or bitterness.
  2. Roll out the thawed Puff Pastry so that the seams are smooth.
  3. Spread 1/2 of the preserves in the center of the Puff Pastry rectangle. Top with a few strawberry slices. Sit the Brie round on top of the strawberries. Repeat the last two steps on top of the Brie. Reserve some of the strawberries and almonds for serving.
  4. Wrap the Pastry around the cheese and seal on top with just a bit of water on your fingers. I like to wrap it so it is overlapping, thick, and rustic looking on top. Ensure it is sealed and do not puncture.
  5. Bake at 350 degrees for about 30-35 minutes, or until the pastry is golden brown.
  6. Serve hot on a pretty platter with the cornbread crackers and the remaining almonds and strawberries arranged on top. Sometimes I will make a strawberry sauce and drizzle on the top for presentation.
  7. You can serve this with any selection of crackers or breads. Or even switch up the ingredients from strawberries to Apples, Brown Sugar, and Walnuts.
