Fresh Coconut Curry Sauce

Ingredients:

  • 2 cloves garlic
  • 1/2 tsp cumin
  • 3/4 tsp salt
  • 3 tbsp curry powder
  • 3 tbsp spelt flour
  • 3 cups water
  • 2 cups coconut milk

Directions:

  1. Heat oil in pan and saute onion and garlic for 5 minutes.
  2. Add spices and cook 1 minute.
  3. Add flour and cook 1 minute.
  4. Stir in water slowly to avoid clumps.
  5. Add coconut and tomato.
  6. Simmer 1/2 hour.
