Ingredients:

  • 1 tsp butter
  • 2 slices of bread
  • 2 eggs
  • pinch of salt
  • 2 tbsp milk
  • maple syrup (optional)
  • cinnamon (optional)

Directions:

  1. Slice up in small chunks your fruit of choice (to cover the face of a slice of bread), i like peaches or bananas
  2. Beat 2 eggs in a bowel, add milk, around 2-3 Tbsp Maple syrup (according to taste) and Vanilla essence with salt
  3. Heat butter in a fry pan over low heat
  4. Place 1 slice of bread in and allow to soak on both sides
  5. Then place soaked slice in pan and place fruit on top carefully
  6. Quickly soak second slice in egg mixture and place on top of fruit
  7. Place lid over pan and cook for 3-4 mins each side on low heat (careful when flipping)
  8. When cooked, bring out and dribble some maple syrup on top and sprinkle with cinnamon (optional)
