Fragrant Salmon With Spring Onion

Ingredients:

  • 1 lb of fresh salmon fillet
  • 2 tsp salt
  • 2 1/2 cups water
  • 1 tsp gingerroot, finely chopped
  • 1 1/2 tsp peanut oil
  • 2 tsp sesame oil

Directions:

  1. Rub the salmon fillets with 1 teaspoon of the salt and the freshly ground black pepper pepper.
  2. In a wok, bring the water to the simmer.
  3. Add the salmon fillets and simmer for about 3 minutes, cover tightly and turn off the heat.
  4. Allow to stand for 4 minutes.
  5. In a small bowl, combine the spring onions, ginger and the remaining 1 teaspoon of salt.
  6. In a small pan combine the peanut oil and sesame oil and bring it to the smoking point.
  7. Remove the salmon from the water and arrange on a platter.
  8. Scatter the spring onion mixture on top and pour hot oil over it.
  9. Serve immediately.
