Four Bean Salad

Ingredients:

  • 1 can (15 to 16 oz.) cut green beans
  • 1 can (15 to 16 oz.) cut wax beans
  • 1 can ( 15 to 16 oz.) kidney beans
  • 1 can (8 3/4 oz.) garbanzo beans
  • 1/2 cup sugar (or a very scant 1/2 cup of splenda)
  • 2/3 cup vinegar
  • 1/3 cup oil
  • 1/2/ tsp salt
  • 1/2 tsp pepper
  • 2 tsp bacon bits

Directions:

  1. Mix drained and rinsed beans, onion,bell pepper and parsley in non-metal bowl.
  2. Mix remaining ingredients except bacon bits in saucepan.
  3. Heat to boiling, stirring occasionally. Pour over bean mixture; toss.
  4. Cover and refrigerate 3 hours, no longer than 24 hours, stirring occasionally.
  5. Drain
  6. Just before serving, sprinkle with bacon bits.
  7. Make the night before…perfect.
