Fluffy Sweet Potatoes In Orange Shells

Ingredients:

  • 8 small oranges
  • 5 medium-size sweet potatoes, boiled, peeled, and mashed (about 4 cups)
  • 1/2 cup milk
  • 1/4 cup firmly packed brown sugar
  • 3 tbsp honey
  • dash of salt
  • dash of pepper
  • dash of ground nutmeg
  • 1/3 cup finely chopped pecans

Directions:

  1. Cut a thin slice from bottom of each orange so that it will sit flat. Cut a 1-inch slice from top of oranges. Gently remove pulp, leaving shells intact. Scallop edges, and set aside.
  2. Combine hot potatoes, milk, sugar, honey, butter, salt, pepper, and nutmeg; mix well. Spoon mixture into prepared orange cups; sprinkle with pecans. Bake at 325° for 10 minutes.
  3. Note: If desired, sweet potato mixture can be piped into orange shells for a more festive appearance.
