Fluffy Cottage Cheese Pancakes

Ingredients:

  • 1 cup flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 tsp. sugar
  • 4 eggs
  • 1/2 cup milk
  • 2 tsp. canola oil

Directions:

  1. Sift together the flour, baking soda, salt and sugar in a small bowl.
  2. In a large mixing bowl, whisk together the eggs, milk, oil and cottage cheese.
  3. Add the dry ingredients.
  4. Stir until completely blended.
  5. Add a small amount of oil or butter to griddle/skillet over medium heat.
  6. Drop mixture by the 1/4 cup on the griddle and cook unitl bubbles form on top.
  7. Flip and cook on the other side until golden brown.
  8. Serve with your favorite syrup.
