Flaky Pineapple Bars

Ingredients:

  • 4 cups flour
  • 1 lb butter or 1 lb margarine
  • 1 cup sour cream
  • 1 tsp vanilla
  • 1 cup sugar
  • 3 tbsp cornstarch
  • confectioners' sugar

Directions:

  1. Cut butter or margarine into flour with pastry blender or two knives.
  2. Add sour cream and vanilla.
  3. Mix well and refrigerate 2 hours.
  4. Meanwhile, cook pineapple, sugar, and cornstarch over medium heat stirring constantly until thick and clear.
  5. Preheat oven to 325 degrees.
  6. Roll out half of the dough and place in the bottom of a jellyroll pan.
  7. Add cooled filling and spread over dough.
  8. Cover with remaining rolled out dough.
  9. Bake at 325 degrees for 55 minutes or until golden brown.
  10. Sprinkle with confectioners sugar.
  11. Cut in 70 squares.
  12. Refrigerate if not used within a short period of time.
