Ingredients:

Directions:

  1. Bring a large pot of salted water to boil over high heat.
  2. Add the potatoes.
  3. Return to the boil.
  4. Cook until just tender, about 7 minutes.
  5. Drain well in a colander and allow to cool.
  6. Heat the olive oil in a 10 skillet over medium heat.
  7. Add the onion.
  8. Cook, stirring, until golden, about 10 minutes.
  9. Season with salt and pepper.
  10. Add the garlic and paprika.
  11. Cook, stirring, 4 minutes.
  12. Raise the heat to high.
  13. Add the potatoes.
  14. Cook, stirring constantly and adding more oil if needed, until the potatoes have crisped and browned to desired doneness, about 5 minutes.
  15. Season with salt and pepper.
