Ingredients:

  • 8 oz cod (actually calls for 1 lb)
  • 3/4 cup skim milk
  • 1/2 cup cornmeal
  • 1/2 tsp salt
  • 3 tbsp oil , olive

Directions:

  1. Cut fillets in 1 inch wide strips. Place in shallow pan with milk. Soak 20 minutes.
  2. Combine cornmeal and salt on waxed paper. Dredge drained fish in mixture.
  3. Cook fish in 3 tblsp of oil in large nonstick skillet over medium high heat until golden brown, about 2 minutes. Lower heat to moderate, turn fish over and cook 2 to 3 minutes or until cooked through. Do not crowd fish in pan: work in batches if necessary, adding additional oil as necessary. Serve immediately with seasoned butter, if you wish
