Ingredients:

Directions:

  1. Cook the rotini according to package directions.
  2. Meanwhile, in a large skillet, heat oil over medium heat.
  3. Saute the garlic and onions.
  4. Add zucchini and peppers, cook 5 minutes or until vegetables are tender, stirring occasionally.
  5. Add the chili powder, tomatoes with diced green chiles and olives, and bring to a boil.
  6. Reduce heat to low.
  7. Simmer uncovered 10 minutes, stirring frequently, until mixture thickens.
  8. Add rotini to vegetables.
  9. Mix well. Sprinkle with parmesan cheese, if desired.
  10. Serve immediately.
