Feta, Goats Cheese & Spinach Phyllo Pie

Ingredients:

  • 1 large bag of spinach
  • 1 large onion sliced or
  • 1 large leek sliced lengthways
  • 2-3 spring onions sliced lengthways
  • 1 packet of feta cheese (or a bit less depending on how much you like!)
  • half packet of goats cheese or less if you prefer its quite strong! or not at all if you dont have
  • little splash of worcester sauce for a bit of tartness

Directions:

  1. Olive oil into a pan about a tablespoon
  2. Saute Onions on a low heat so they soften together
  3. Add salt and pepper
  4. Dash of worecester sauce
  5. Paprika to taste
  6. Add spinach bit by bit once onions have become soft l
  7. Let the mixture mingle together off the heat when finished for 5 mins
  8. In a bowl mix together and crumble slightly the goats cheese and feta leaving some larger chunks for texture
  9. Add the onion and spinach mixture to the cheese mix well and let is rest while you prepare the tray
  10. Grease a baking tray with a little olive oil
  11. Start to layer the bottom with the pastry leaving enough sheets for the top
  12. Layer mixture into the tray and even out into corners
  13. Layer the rest of the pastry on top and free fold the edges to seal for baking
  14. Stab the pie a couple of times for the heat to get through
  15. Sprinkle with paprika black pepper or nigella seeds or sesame seeds if you want or brush with butter or egg for a brown top
  16. Put into a preheated oven at about gas 5/6 for about 15-20 mins keep a watch so the pastry does not burn
  17. Enjoy hot or cold
