Elle's Low-Fat Pumpkin Oat Bread

Ingredients:

  • 3 cups flour
  • 1 tsp salt
  • 1 cup applesauce
  • 4 eggs
  • 1/2 cup water
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 2 cups oats

Directions:

  1. Preheat oven to 350.
  2. Beat eggs. add pumpkin, applesauce, water, and spices. mix.
  3. Add everything else but oats. mix.
  4. Fold in oats.
  5. Pour into 9x9 pan (or 2 loaf pans). bake for 50-60 minutes or until toothpick or knife inserted into center of loaf comes out clean.
