Eggplant Omelet (South Beach Phase 1)

Ingredients:

  • 1 small eggplant (250g)
  • 1/2 tsp salt
  • 30 g butter or 30 g margarine or 1 -2 tbsp olive oil
  • 3 eggs
  • 3 tbsp cream (use milk for sbd phase 1) or 3 tbsp skim milk ( use milk
  • 1 pinch nutmeg

Directions:

  1. EGGPLANT: Slice in 1/2 inch (1 cm) pieces and sprinkle with salt. Leave for 15 minutes. Dry with kitchen paper.
  2. Melt butter or margarine or olive oil in a frying pan. Fry the eggplants on both sides. Reduce heat.
  3. Mix eggs with cream (or milk) and season with nutmeg, salt and pepper.
  4. Pour egg mixture to the eggplants and cook covered until done.
