Ingredients:

  • 1/2 cup. water
  • 1/4 cup. melted butter
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. onion
  • 1/2 cup. cheese
  • 1/2 cup. cracker crumbs

Directions:

  1. Peel and slice eggplant; cut in cubes.
  2. Cook until tender; drain; add butter, eggs, bread cut in small blocks, salt, pepper, onions, and cheese cut in blocks.
  3. Pour in greased casserole; sprinkle crumbs on top; bake 20 to 30 minutes at 350 degrees.
