Easy Scotch Shortbread

Ingredients:

  • 2 cups flour
  • 5/8 cup sugar

Directions:

  1. Using a pastry cutter (or your hands!) cream butter.
  2. Add sugar - mix well.
  3. Add flour - mix well. The dough will be pretty firm.
  4. Shape into small balls, placing on ungreased cookie sheet, and flatten out gently.
  5. Bake at 350 for 10 min or until *lightly* browned on the bottom. Cookie will not brown unless burned :)
  6. Shortbread is generally a dry cookie so these are great with coffee, tea or a glass of ice cold milk!
