  1. In lg skillet, over med-hi heat, Bring orange juice to a boil.
  2. Add onions, peppers, zucchini and eggplant.
  3. Cook and stir 5 minutes.
  4. Add tomatoes, garlic and seassonings.
  5. Mix well, cover and simmer for 10 minutes.
