Ingredients:

  • 1 pinch salt
  • 3/4 cup sugar
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 300°F.
  2. Spray baking sheets with Pam (or other cooking spray).
  3. Beat egg whites with salt until foamy.
  4. Add sugar and vanilla, beating until stiff peaks form.
  5. Fold in coconut.
  6. Drop batter onto prepared baking sheets by teaspoons.
  7. Bake for 20-30 minutes or until light brown.
