Ingredients:

  • 1 chopped bell pepper (your choice of color)
  • 1 package hilshire farms sausage
  • 2 cans romel tomatoes

Directions:

  1. Boil whole chicken, when cooled, cut up. Save the broth for rice.
  2. When I'm short on time, I use a pre-cooked rotisserie chicken from the store.
  3. In large pot, add liquid according to package directions.
  4. Saute onions and bell pepper in 1 - 2 Tbl vegetable oil, then add to your pot.
  5. Brown sausage and add to the pot.
  6. Add cut up chicken.
  7. Add rice and bring to a boil.
  8. Simmer for 40 minutes or until rice is done.
  9. I love this served with Crystal Hot Sauce!
