Ingredients:

Directions:

  1. Mix 1 cup sour cream, 1 cup cheese, 1/4 cup salsa, chicken, cumin and cilantro.
  2. Place ~1/4 cup of mixture in a tortill and roll.
  3. Place seam side down in a greased baking pan.
  4. Repeat until mixture is gone.
  5. Brush a bit a bit of water over the top of the enchiladas and put remaining salsa over the top.
  6. Cover pan with aluminum foil and bake at 350 for 30 minute.
  7. Remove from oven, sprinkle with remaining cheese and bake for 5 min or until cheese is melted.
  8. Top with lettuce and tomato;.
  9. Serve with sour cream.
