Ingredients:

Directions:

  1. Heat the oil in a large saucepan. Add the onion and curry paste and cook for 3 minutes. Add the beef and cook until browned.
  2. Add the soup and water. Bring to the boil, reduce heat and simmer uncovered, stirring occasionally, for 40 minutes or until beef is tender.
  3. Stir in tomatoes cook for 2 minutes until heated through.
  4. Stir in mint & serve with yoghurt and steamed rice.
