Easy Barbecued Salmon

Ingredients:

  • 5 cloves garlic, chopped
  • 1/4 tsp salt
  • 2 tbsp finely chopped fresh parsley
  • 2 tbsp olive oil
  • 2 lbs of unskinned salmon fillets

Directions:

  1. A day ahead of serving, make the garlic paste by mashing the garlic with salt.
  2. Mix in the parsley, oil, and tomatoes.
  3. Chill the paste at least 8 hours or overnight.
  4. Place salmon, skin side down, on greased grill over low heat.
  5. Brush half of garlic mixture on top of salmon.
  6. Cook 15 minutes.
  7. Brush with remaining garlic mixture.
  8. Increase heat to medium and cook about 10 minutes more, or until flaky.
