Ingredients:

Directions:

  1. Place 3 Cups of water and 1 t salt in a 5 quart pot. Bring water to a boil and add 1 chicken bullion cube and one T of butter.
  2. Add 1 1/2 C long grain rice. Bring water back to a boil, stirring constantly. Turn heat down to a simmer and cover with lid. Cook 15 minutes. Let stand 10 minutes until all of the water has been absorbed.
  3. Chop onion, red pepper and celery. Set aside.
  4. In another skillet, brown sausage and add chopped vegetables to sausage. Brown over medium heat for 5-10 minutes.
  5. Drain sausage/vegetable mixture WELL,.
  6. Combine the rice with the sausage mixture and stir, heating the mixture thoroughly.
  7. Add salt and pepper to taste.
  8. * If you like the dirty rice spicier, you can add a few drops of your favorite hot sauce to taste.
  9. ** In summer, you can add one or more medium tomatoes, chopped.
