Ingredients:

  • 4 tbsp olive oil
  • 1 1/2 lbs potatoes , cut into 3/4 inch pieces
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 onion, chopped into 1/2 inch pieces

Directions:

  1. In large nonstick skillet, heat 3 tbsp olive oil over medium-high heat.
  2. Add 1 1/2 lbs potatoes, cut into 3/4 inch pieces, 1/2 tsp salt and 1/2 tsp pepper.
  3. Toss to coat; cover and cook 5 minutes.
  4. Add another tbsp olive oil; stir in chopped onion.
  5. Reduce heat to medium; cook covered 5 minutes.
  6. Uncover and cook, stirring frequently until potatoes and onions are browned, about 15 minutes.
  7. Toss with another 1/2 tsp salt and serve.
