Dijon Mustard Alligator Medallions

Ingredients:

Directions:

  1. Sauce: Combine mayonnaise, mustard, soy sauce and lemon juice and mix well.
  2. Gator: Trim fat. Cut into medallion size pieces.
  3. Use a meat mallet to tenderize the medallions into flat thin pieces.
  4. Dip into the flour, making sure fully covered. Dip into egg.
  5. Saute in the butter until the medallions are golden brown.
  6. Drain of oil and serve with Dijon Sauce.
