Dijon fish cakes

Ingredients:

  • 4 tilapia fillet
  • 1/2 cup mayonnaise
  • 2 eggs
  • 2 tbsp chopped dill
  • 3/4 cup panko

Directions:

  1. Bake fillets in 400 degree over until don (around 12 min)
  2. Let cool and flake
  3. Mix together mayonnaise, mustard, dill and eggs.
  4. Fold in fish and panko.
  5. Make into 8 cakes and refrigerate.
  6. Cook in olive oil in nonstick pan until golden. 3-5 minutes per side.
