Ingredients:

  • 4 large plum tomatoes, trimmed and halved lengthwise (1 lb)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions:

  1. Put oven rack in middle position and preheat oven to 375°F.
  2. Arrange tomatoes, cut sides up, in 1 layer in an 8- to 9-inch glass baking dish and sprinkle with salt and pepper.
  3. Roast until skins are wrinkled and beginning to brown, about 30 minutes. Keep warm, covered with foil, until ready to serve.
