Tomato and Feta Cheese Salad

Ingredients:

  • 1 large tomato
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp mint
  • 2 tbsp scallions
  • 2 tsp olive oil
  • 2 tsp lime juice

Directions:

  1. Cut tomato into wedges and sprinkle with salt and pepper.
  2. Mix herbs with spinach.
  3. Place feta in center and plate and arrange tomato around it. Sprinkle with scallions
  4. Mix oil and lime juice and drizzle over tomatoes.
