Diabetic Cornflake Spice Muffins

Ingredients:

  • 2 cups flour
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 2/3 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 400°F
  2. Mix dry ingredients together.
  3. Beat eggs and milk and oil.
  4. Make a well in centre of the dry ingredients and add liquids all at once, stirring just until moistened.
  5. Fold in cornflakes and raisins.
  6. Fill greased muffin pans 2/3 full. Bake 15 minutes.
