Ingredients:

  • 3 1/2 cups water
  • 1/2 tsp. turmeric
  • 1/2 tsp. fresh ginger
  • 1/2 tsp. salt
  • 1 tbsp. oil
  • 1 tsp. coriander
  • 1 tsp. cumin
  • 1/4 tsp. chilli powder
  • 1 tsp. olive oil

Directions:

  1. Bring lentils in water with turmeric and ginger to a boil. Lower heat and simmer for about an hour, or until mixture is thick and lentils very soft. When done cooking, stir in salt.
  2. Gently saute onions in 1 tbsp. oil for 3-5 minutes, or until golden and soft. Add spices.
  3. Add onions to lentils and stir gently to mix.
  4. Stir in 1 tsp. olive oil.
