Ingredients:

Directions:

  1. Cook squash by your favorite method.( Micro, steam, pressure cook etc )
  2. Normally I cut the squash in half, scoop out the seeds and any wet pulp
  3. I pierce the skin with a knife
  4. I place skin side up and usually microwave each half till tender may 12 to 15 minutes ( skin side will be shiny and very soft indicating squash is tender )
  5. I let it cool, then I take the tinges of a fork and scrape out all the strands which are dry and separate nicely into a bowl-
  6. Now melt butter in a large skillet over medium heat.
  7. Toss in the strands to get coated all over with butter.
  8. Add herbs of choice, and grated or shredded cheese of choice, garlic if using and cook and stir till cheese is melted and all is hot.
  9. This makes a wonderful side dish with any meal
  10. Reheats well too.
