Ingredients:

  • 2 cups flour
  • 2/3 cup brown sugar
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp ground ginger
  • 1/2 cup butter
  • 1/2-2/3 cup libby's canned pumpkin
  • 2 large eggs
  • 1/3 cup buttermilk

Directions:

  1. In a large bowl combine all dry ingredients.
  2. In medium bowl combine all wet ingredients.
  3. Mix wet mixture with dry mixture.
  4. Preheat oven to 400 degrees.
  5. Grease 24 mini muffin cups.
  6. Scoop into the prepared muffin cups, fill about 3/4 full.
  7. Bake for 7-10 minutes, or until cooked in the middle.
