Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix the 1 tbsp ground flax seed with the 2 tbsp of water and leave it for a couple of minutes to thicken.
  3. Put the blueberries in the bottom of a 9 inch square pan.
  4. Mix rest of ingredients together in a bowl and dump on top of the fruit. Bake for 25- 30 minutes or until golden brown.
  5. Top with rice/almond/soy milk, soy yogurt, or eat plain.
  6. The oatmeal can be prepared ahead of time and then just thrown into the oven in the morning.
  7. Try this recipe with any kind of fruit. My kids love the blueberries best, but you can also try chopped up peaches, chopped apples, raisins. The possibilities are endless!
