Curried Chicken Salad

  1. Mix together dressing ingredients
  2. Chop the celery and apple into attractive chunks
  3. Mix in raisins, nuts and oranges
  4. Pour dressing overtop and mix well
  5. I allow it to mellow in the fridge for a few hours before serving, it allows the flavours to develop.
  6. Serve of mixed greens for a filling but light meal
