Crockpot Green Rice Casserole

Ingredients:

  • 1 1/2 cups of evaporated milk
  • 1/2 cup of melted butter
  • 3 large eggs
  • 1 cup of chopped parsley
  • 1 1/2 cups of finely chopped spinach (i use 2 boxes of defrosted frozen , squeezed dry and chopped again)
  • 1/2 cup of minced scallions
  • 1/2 tsp of salt
  • 1/2 tsp of white pepper
  • several grates of fresh nutmeg...about 1/4 tsp.

Directions:

  1. Combine evaporated milk, butter and eggs.
  2. Beat until frothy.
  3. Stir in remaining ingredients.
  4. Grease the slow cooker insert.
  5. Transfer ingredients to slow cooker, cover and cook on high for one hour.
  6. Turn to low and cook another 4 to 6 hours.
  7. I recommend stirring a few times the first hour.
  8. Once you turn it to low, it doesn't need to be messed with.
