Crock Pot Potato Boats

Ingredients:

  • 4 large potatoes , for baking
  • 1 cup milk
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Wash potatoes in water.
  2. Place potatoes in the crock pot and cook on low for 8 hours.
  3. Remove from crock pot and slice in half lengthwise so they look like the bottom of a boat.
  4. Scoop out potato leaving about 1/4 inch left on the skin.
  5. Mash scooped out potato with milk, butter, salt and pepper.
  6. Blent until potatoes are the consistency that you like.
  7. Spread butter in center of potato skins with basting brush.
  8. Spoon mashed potatoes into skins.
  9. Sprinkle with paprika.
  10. Place potatoes on baking sheet and broil in oven for ten minutes.
  11. You can eat the mashed potato inside and then eat the outside like a baked potato.
  12. Enjoy.
