Ingredients:

  • 2 large eggs
  • 1 cup milk
  • 2 tbsp sugar
  • 1 tsp vanilla

Directions:

  1. In a blender or food processor, blend all ingredients until smooth. Stir down and repeat, if necessary. Cover and refrigerate for 1 hour (I always skip this though, since i'm impatient)
  2. Heat a non-stick pan over medium-high heat, spray the pan with oil, lift the pan from the heat and pour in 1/4 cup of the batter, tilting and totating the pan to coat the surface. Cook until almost dry on top and lightly browned on the edges, about 1 minute. Loosen the edge with a spatula and flip the crepe over using your fingers, then cook the other side for about 15 seconds. Repeat with the remaining batter, coating the pan with oil each time.
