Ingredients:

Directions:

  1. Melt butter in 2 qt hvy sauce pan over med high heat
  2. Saute yel onions, celery, bell pepper, garlic, bay lvs until wilted - approx 5 min
  3. Add tomato sauce 7 water - bring to low boil, reduce to simmer & cook 30 min, stirrin occasionally
  4. Add sugar, thyme, basil, green onions & parsley - continue cokking an add'l 10 min. add black pepper
  5. Remove from heat & set aside
  6. Preheat oven to 355 degrees, Place fish in ovenproof casserole dish lge enough to hold fillets
  7. Spoon sauce over fish until covered. Place covered dish (cover with AL foil if lid not available) in oven & cook 30 min or until fish is done
  8. Serve with hot rice - spoon creole sauce over rice - place fish on side - garnish with parsley
